The Brew & Roastery Guide
Rest Period:
Coffee needs time to off-gas ("rest") so we can properly extract the desired tasting notes. When coffee is freshly roasted, the trapped CO2 gas is still being released. This acts as a barrier that repels water, preventing it from fully saturating the coffee and extracting the tasting notes when brewing too early.
Roast Profile:
Lighter roasts preserve more of the coffee's origin characteristics, highlighting vibrant floral and fruity notes, whereas medium to dark roasts tend to showcase the rich chocolate and nutty flavors developed during the roasting process.
Because light roasts (especially ultra-light roasts) spend less time in the roaster, they are denser, less soluble, and require additional resting time to off-gas CO2 for optimal brewing.
Peak Flavor Window:
Specialty light and ultra-light roasts typically reach their peak flavor between 2 and 6 weeks after roasting and remain delicious for up to 12 weeks when stored properly in sealed bags.
Medium to dark roasts typically reach their peak flavor 1–4 weeks after roasting and remain delicious for up to 6–8 weeks.
Each roaster is different, and one roaster's “light roast” could be the same as another's “medium roast.” We defer to each roaster's guidance on the proper resting schedule, as these are general guidelines.
It is common to see 3-4+ weeks recommended by some roasters, such as Tim Wendelboe (Nordic-style light roast).
As a Multi-Roaster:
We do not roast our own coffee in-house, but we order in bulk for international drops to pass on the savings in shipping costs to you.
By the time these imported coffees reach your doorstep, they are often entering their ideal resting and peak brewing window, so they are ready to enjoy right away without waiting weeks to rest!
